6 ounces molasses, by weight (about 1/2 cup)

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

2 cloves garlic, minced

6 to 8 sprigs fresh thyme

4 6 -to-8-ounce bone-in pork chops (1 inch thick)
What you’ll need to do:
Start with a bit of prep work, which will be worth it when it’s done! Take a 1 gallon zip-top bag and add the coffee, molasses, vinegar, garlic, mustard, ginger, thyme, 1 teaspoon of the kosher salt, 1/2 teaspoon of pepper, and the pork chops. Securely seal the bag and shake to combine all ingredients. Place the bag into the refrigerator overnight or at least for 2 hours.
When you’re ready to cook, preheat your grill to medium-high and remove the pork chops from the bag. In a saucepan, pour in the marinade and let it gently boil over a medium-high heat, stirring for about 12 to 15 minutes. This should reduce it to 1/2 cup.
Remove the thyme stems and your marinade is ready.
For 3 to 4 minutes on each side, grill the pork chops. They should reach an internal temperature of 145 degrees. Don’t under cook the meat! Let them rest for 5 minutes. Now they’re ready to serve with the glaze! Enjoy!
