Before mixing ingredients, preheat the oven to 350 degrees. Then grease your muffin tin or add paper liners.
Next mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, coffee, and vanilla. Then sprinkle the baking soda and salt over the mixture and mix in.
After stirring in the above ingredients, add the flour. Be sure to stir until it is just incorporated. Next fold in the chopped pecans. Then pour the mixture into a prepared muffin tin.
Bake for 20 to 30 minutes and cool on a rack.
Paula Deen’s note: Not sure if the muffins are done? Insert a toothpick into the center of a muffin. If it comes out clean, it’s done.
